Food Preservation

Methods to preserve: 1) Salt โ draws out water (dehydrates microbes). 2) Sugar โ in jams and jellies. 3) Oil and vinegar โ prevent oxygen. 4) Pasteurization โ heat to 70ยฐC for 15s (Louis Pasteur). 5) Refrigeration โ slows microbial growth. 6) Preservatives โ sodium benzoate.
